Tortellini, Ravioli and Preserved Veg


On late nights at work, the quick dinner list is consulted, and one of the quickest and easiest (and also most delicious) is fresh pasta with something thrown over the top.

We have some beautiful fresh filled pastas in Manna Organic Store, a lovely tortellini filled with ricotta and rocket, and a ravioli filled with goats cheese, honey and walnuts to name but two.

For a super quick dinner, when boiling the pasta for the required 4 minutes, I open a small jar of sundried tomatoes (or roasted peppers), one of capers and one of olives. Throw a few little spoons of each with a little oil from the tomatoes into a serving bowl, toss in the cooked pasta, and then sprinkle with a little grated parmesan and a twist of black pepper. Delicious, healthy and fast!
